Long before the invention of the refrigerator, before we were taught that bacteria and fungi were dirty and disgusting, people harnessed them to preserve food and create new flavors and textures full of umami. The making of these foods has been reclaiming its place in recent decades.
Dr. Meir Chizik, a researcher of the history of nutrition and author of the book Local Fermentation, invites you to follow him into the world of fermentation—lactic, alcoholic, and acetic—to get to know the bacteria and yeasts behind them and discover how ancient food-preservation techniques have become an integral part of our food cultures today.
