Prof. Uri Luzzams from the Faculty of Biotechnology and Food Engineering at the Technion joins Hila Alpert for a lively conversation about the intersection of food structure, digestion, the microbiome, and health. About fermentation and nutritional availability, and about the journey from ancient traditions to scientific questions such as what really happens to food—and to us—when it ferments.
